To create ice cubes infused with edible flowers, here is what you’ll need:
- An ice cube tray.
- A variety of colourful edible flowers.
- Fruit that freezes well, like blue berries and citrus
- Optional mint leaves or tiny sprigs of lemon balm
- A chopping board
- Sharp knife
- A small pouring jug filled with water
Select your Edible Flower Varieties
Edible flowers with small petals are best suited to making ice cubes. Try sweet William flowers, cornflower, viola and pansies. For a herbal infusion, try chamomile and borage.
Evenly cut fruit and flowers into small enough pieces to fit in each ice compartment.
Choose from two methods; either submerge a single flower which then appears to be suspended in the ice cube, or place a tiny cluster of flowers and fruit into each ice cube.
To submerge a flower within an ice cube, carefully half fill the ice cube tray with water, then place a small pansy, or similar edible flower into the water. Freeze for 10 mins, then add the remaining water and freeze. This will create the appearance that the flower is suspended in the ice cube and prevent it from rising to the surface.
The second method is simpler, create a tiny cluster of colourful fruit pieces and place an edible flower within the arrangement. Use the small pouring jug to carefully fill the ice cube tray almost to the top, water expands when it freezes so avoid filling it to the brim. Place in freezer until frozen. The arrangement will float to the top of the ice cube.
